These chocolate muffins are made without flour and sugar!! Because I don't make many sweets I prefer Truvia as my sweetner. I would not choose it for everyday consumption, but for a special treat now and then I use it. If you follow the THM {trim healthy mama} plan, these would be an "E" {energizing}. These days everyone thinks that carbs are a terrible thing. But our bodies were designed to eat carbohydrates. Carbs fuel our bodies... if we eat the right ones. These are good-for-you, energizing chocolate muffins! And they're sooooooo moist!!!
Ingredients:
1¾ cups old fashioned oats (blended into oat flour)
¾ cup unsweetened cocoa powder
1½ teaspoons baking powder
1½ teaspoons baking soda
¼ teaspoon salt
½ cup Truvia (or sweetners of choice)
3 egg whites
½ cup unsweetened applesauce
1 cup hot water
½ cup 0% Greek yogurt (plain)
1 teaspoon vanilla extract
1 teaspoon white vinegar
¾ cup unsweetened cocoa powder
1½ teaspoons baking powder
1½ teaspoons baking soda
¼ teaspoon salt
½ cup Truvia (or sweetners of choice)
3 egg whites
½ cup unsweetened applesauce
1 cup hot water
½ cup 0% Greek yogurt (plain)
1 teaspoon vanilla extract
1 teaspoon white vinegar
Optional: 1/2 cup sugar free chocolate chips/ Lily's Stevie sweetened chocolate chips.
Bake at 350° for 18-20 minutes. The tops will look very dark, almost black. Don't let that alarm you. They're delicious!!
